Combines ease of processing with a good nutritional
Fats for fillings and creams in chocolate products and bakery products must satisfy a number of requirements. For example, they must melt easily and completely so as to give the best possible feeling in the mouth and so that the flavour will be developed in the best possible way. As well as this, they also have to crystallise out properly, that is become solid, for a good further processing such as adding a layer of chocolate or cutting up wafer loaves.
These properties determine to a very large extent the quality and the processing of the final chocolate or bakery product. In the past trans fatty acids in the fats ensured that the fillings had these properties, but trans fatty acids are not healthy. Therefore, in the past efforts were made to find replacements for these fatty acids, with saturated fatty acids in particular being thought suitable in the first instance. But these fatty acids are also less healthy and recently the fats industry has preferred to replace these with unsaturated fats. However, this slows down the process of crystallization so that the production time is increased and the process became less efficient.
Loders Croklaan has developed BiscuitineTM 580 so as to be able to make a trans fat free product that does not slow down the production process and provides good nutritional value. Particularly for chocolate fillings and bakery products BiscuitineTM 580 has sophisticated crystallization behaviour that does not slow down the production process and also does not increase the amount of saturated fat in the end product. BiscuitineTM 580 gives the end product an attractive, fine structure, while the filling fat also gives the end product a creamy taste in which all the different taste components are experienced fully.
BiscuitineTM 580 is made from palm oil. By processing the fats in an innovative manner, called interesterification, a fat is obtained that satisfies all the properties required and also has a healthy fatty acid composition.
These are reasons why BiscuitineTM 580 was one of the three product innovations nominated for the FI Excellence Awards 2009. The nutritional value of BiscuitineTM 580 is better than that of a filling fat based on coconut oil that is often used for the above-mentioned applications. BiscuitineTM 580 contains 40% less saturated fat than a fat based on coconut oil.
