Fillets of fresh fish, Alaska pollack (Theragra chalcogramma, 65%), are used in the production of Omega 3 Fish Fingers. Compared to cod the flesh of the Alaska pollack is greyish-white, slightly drier and has a slightly firmer structure.
For reasons of freshness the fish is filleted by hand on board the ship immediately after it has been caught; with the head, tail, skin and bones of the fish being removed. The fish fillets are classified according to the quality of the flesh, whereby Iglo selects the best quality. The fish fillets are then stacked and deep frozen into large blocks. The Fish Fingers are cut out of these later in the factory.
The shaped fingers (the flesh of the fish has a neutral taste and colour) are immersed in a batter made from water, flour, potato starch, salt and spices such as paprika powder and turmeric. This helps the batter layer, which also contains breadcrumbs, to adhere better and the fish finger gets its tasty crust.
After this they are pre-fried in pure sunflower oil with the core of the fish fingers remaining frozen. The fish fingers are then deep frozen again (-25ºC) and packed.
Iglo was founded in 1960 and formed part of Unilever until 2006 when it was taken over by the British Investment company Permira Funds. Iglo is one of the leading food brands in the Netherlands. The deep freeze products produced by the company provide the consumer with tasty and easy to prepare, but above all healthy, meals. Fish Fingers have already been one of the most popular deep freeze products in the Iglo range for many years. The company is continuing to build on this success with the introduction of Captain Iglo Fish Fingers Omega 3.
All Captain Iglo Fish Fingers will be labelled with the ‘Ik kies bewust’ (the Healthy Choice) logo from January 2009. Iglo products are also labelled with the MSC (Marine Stewardship Council) logo.
